Serves 6
1 1/2 pounds eggplant
3 tablespoons lemon juice
1 teaspoon salt
2 teaspoons minced garlic
3 tablespoons tahini
2 tablespoons olive oil
1. Preheat oven to 400 degrees Fahrenheit
2. Prick eggplant with a fork (to let steam escape) and place in oven.
3. Bake until tender (about 30 minutes)
4. Remove eggplant from the oven. Halve and scoop out the flesh.
5. Blend in a food processor and blend until smooth.
6. In a separate bowl mash garlic and salt together.
7. Stir in garlic, salt, tahini and lemon juice. Blend everything until smooth.

Blend yoghurt and garlic using a food processor
The cucumbers can be either pureed and strained, or seeded and finely diced. Stir into mixture and blend well. Tzatziki is always served cold.
Tzatziki is often served with bread (loaf or pita) as part of the first course of a meal. Greeks, Cypriots and those from all over the Middle East use this dish as a side dish to a meal with meat. The acidity cuts the fat, thus tzatziki is also used as a sauce for souvlaki and gyros.
Hummus is nutritious (12% protein) and quick to prepare. This recipe uses canned chickpeas. If you prefer to start from scratch soak the beans overnight and then cook in a crockpot.

2 cups (2, 15 ounce cans) of chick peas
3 cloves of garlic, minced
3 tablespoons of lemon juice (1 fresh lemon)
1/4 cup of water
salt to taste
3 tablespoons tahini (sesame paste)
lemon slices, paprika, parsley or cilantro for garnish
1. Place all ingredients except tahini and garnishes in a food processor. Process until very smooth.
2. Stir in tahini. Mix until thoroughly blended.
3. add salt to taste.
4. Spoon hummus on to a plate. Edge the plate with garnish.
